 It is not unusual for people to gravitate to something warm during the winter months. Stew is a traditional staple for comfort food and is something that will keep a smile on your face. Sauté your onions and garlic, then add your vegetables and lentils. This stew is a variation of traditional stew that has a Caribbean twist that is delicious but also healthy. Follow the instructions to this recipe for maximum results. 


Ingredients:

1 large can of lentils

1 shallot

2 scallions

3 cloves of garlic

1 cup of vegetable stock

1 cup of diced butternut squash, pumpkin, sweet potato or carrot

1 can of stewed tomatoes

1 tablespoon of parsley

1 bay leaf

1 teaspoon of browning

½ cup of chopped celery(optional)

½ of scotch bonnet pepper(optional)

1 tablespoon of brown sugar

Teaspoon of pepper

Salt to taste

Caribbean seasoning


Step 1: Rinse off your vegetables and prepare to cut them into approximately 1cm to 2cm cubes

Step 2:  In your pot, add 1 tablespoon of olive oil and put your burner on low heat. Add your chopped shallot, scallion, minced garlic and black pepper, after 1 minute add your carrot(optional) and celery(optional)

Step 3: Add in your diced butternut squash or pumpkin, 1 can of stewed tomatoes and 1 can of lentils

Step 4:  Now add 1 cup of vegetable broth, lightly salt dish with Caribbean seasoning, 1 tablespoon of brown sugar, 1 teaspoon of browning, bay leaf and freshly chopped parsley.

Step 5: Stir the dish with a wooden spoon, keep your heat on low, place the lid on the top of the pot slightly off so the vegetables don’t overcook.

Step 6: Let the stew cook for 20-25 minutes until it reaches a boiling temperature. Poke vegetables to make sure they are cooked. Taste stew to make sure the seasoning is to your liking.

Step 7: Served garnished with chopped parsley, over rice, with crackers or by itself.
